ISSUE:
You want remove layaways with deposits, but not refund the deposits back to the customers. The customers have already received the product, so you don't want the items to go back into inventory.
PROCEDURE:
Convert the layaway to an Invoice and add a discount for the amount of the Invoice. For layaways that had a deposit, we press Ctrl+Y and move that line entry (using Ctrl+up/down arrow key) to adjust the tax amount closer to what should be paid based on the deposit amount. For items that are backordered on the layaway, you need to edit the layaway, delete the backordered item, and save the layaway before converting to Invoice.
